Baked Eggs in Avocado

  • 40 g hummus
  • 2 whole eggs (~100 g)
  • 1 avocado (~200 g)
  • 50 g cherry tomatoes
  • optional: a tiny bit of salt
  • optional: 1 tsp black pepper
  • optional: 2 g chives (chopped)


  1. Preheat oven to 425°F (220°C).
  2. Wash and chop chives (optional) and set aside. Wash and slice tomatoes and set aside.
  3. Cut avocado(s) in halves, making a bowl to put the egg(s) in. If you are using less, remove the extra. Place them in a baking dish, resting them along the edge so the avocado won’t tip over.
  4. Crack the egg(s) into the avocado(s), being careful to keep the yolks intact.
  5. Add cherry tomatoes on top of avocado and season with salt and pepper.
  6. Gently place baking dish in the preheated oven and bake until eggs are cooked, about 20 minutes. Let cool then top with hummus and chives. Eat with spoon and enjoy!
